Lemon Cake
125g butter softened
3/4 cup sugar
rind of 1 lemon, grated
2 eggs
1 1/2 cups self raising flour
4 tbsp (1/4 cup) milk
1/4 punnet sour cream
1 Combine the above in that order
2 Bake at 150 for 30-35 minutes
3 When done, poke holes in the cake and pour over the topping
Topping: juice of one lemon and 1 cup of icing sugar whisked together.
